People usually say sunflower greens are “sweet and nutty.” But what’s nutty? There are so many different kinds of nuts, and they taste so many different ways, so when you say something tastes nutty, that’s not very helpful. OK, have you ever eaten artichokes? Sunflowers and artichokes are related, so they taste kind of similar. Except raw artichoke is horribly bitter, you wouldn’t want to eat it that way, so sunflower microgreens are harvested before the bitterness develops. That’s why they are a little sweet-tasting. A lot people like to cook sunflower greens with eggs. Plus they have a little more...I don’t want to say meat on them, because they’re vegetables, but they’re just a little more than other types of microgreens, so you can use them to make up the bulk of a salad, the way you would with lettuce. Plus, you can use them for all the other things microgreens and sprouts are good
for, on sandwiches and wraps and so on.

As for nutrition, sunflower microgreens are very low-calorie—seriously, you’ll get bored with eating before you can eat too much of these—and while most vitamins and minerals are present in only trace amounts, they’re a great source of iron. They have decent amounts of copper, manganese, selenium, and vitamin K, too. They’re a great addition to a healthy meal.
